Friday, June 12, 2020 12:49 PM

Calling all sweet tooths! If you’re craving something sugary, try this nutritious, delicious and sweet dessert that’s vegan, gluten-free and paleo-friendly.

This pudding is easy to make, and its comprised of whole foods. It’s so delightful that you won’t even know it’s plant-based. This recipe is actually much easier than using traditional box pudding. No need to let it set, it’s ready in 5-minutes.

If you like berries, feel free to add them to this dessert. They make a colorful and delicious addition. Lori Bumbaco, Oncology Dietitian at NorthShore’s Kellogg Cancer Center shares this decadent dessert:

  •  2 perfectly ripe avocados
  • • 1 cup fresh raspberries
  • • ¼ cup maple syrup
  • • ¼ cup unsweetened cocoa powder
  • • ¼ cup plant-based milk
  • • ½ teaspoon cinnamon

  1. Cut the avocado in half and remove the seed.
  2. Scoop each half into a food processor.
  3. Add the raspberries, syrup, cocoa powder, milk, and cinnamon to the food processor.
  4. Pulse on high for 60-90 seconds, scraping down the edges and blend again as needed.
  5. Garnish with more fresh berries and raw cacao nibs or chocolate chips as desired.
