Heart Healthy Recipe: Plant-Based and Nutrient-Dense Avocado Dark Chocolate Pudding

Calling all sweet tooths! If you’re craving something sugary, try this nutritious, delicious and sweet dessert that’s vegan, gluten-free, paleo-friendly and, heart-friendly! 

This dark chocolate pudding is easy to make, and its comprised of whole foods. It’s so delightful that you won’t even know it’s plant-based. This recipe is actually much easier than using traditional box pudding. No need to let it set, it’s ready in 5-minutes.

Studies show that dark chocolate — when it is not loaded with sugar and saturated fat — is indeed a heart-healthy chocolate treat and more. Dark chocolate is rich in disease-fighting antioxidants. Studies show it can help reduce blood pressure and lower your risk of heart disease.

Pudding

If you like berries, feel free to add them to this dessert. They make a colorful and delicious addition. Lori Bumbaco, Oncology Dietitian at NorthShore’s Kellogg Cancer Center shares this decadent dessert:

Ingredients:

  •  2 perfectly ripe avocados
  • 1 cup fresh raspberries
  • ¼ cup maple syrup
  • ¼ cup unsweetened dark cocoa powder
  • ¼ cup plant-based milk
  • ½ tsp cinnamon

Directions:

  1. Cut the avocado in half and remove the seed.
  2. Scoop each half into a food processor.
  3. Add the raspberries, syrup, cocoa powder, milk, and cinnamon to the food processor.
  4. Pulse on high for 60-90 seconds, scraping down the edges and blend again as needed.
  5. Garnish with more fresh berries and raw cacao nibs or chocolate chips as desired.
