Fresh Recipe: Peanut Butter Banana "Sushi"

Peanut butter is a great way to help kids get their protein in and healthy fat to help them grow. It’s not only beneficial for kids, but for adults too as it is rich in fiber to help feel fuller longer and give an energy boost! Atara Schayer, RD, Registered Dietitian at NorthShore, shares a fun way to eat peanut butter. It’s a great recipe to make ahead for lunch or a snack, and a meal that kids can help prepare.

Peanut Butter Banana “Sushi” Roll (Recipes makes 1 serving)

Ingredients:

  • 2 tbsp peanut butter
  • 1 tortilla wrap
  • 1 medium banana, peeled

Directions:

  1. Grab your wrap and spread almost all of the 2 tablespoons of peanut butter down the middle third. Save some peanut butter for later.
  2. Place the banana on top of the peanut butter.
  3. Roll the wrap and use the last bit of peanut butter to “seal” the wrap together.
  4. Slice into pieces, like a sushi roll.
  5. Enjoy!

 Atara also recommends these tips to jazz up your roll:

  1. Use a whole wheat tortilla for added fiber.
  2. Choose a peanut butter without added sugar, no hydrogenated oils and lower in sodium.
  3. Substitute sunflower butter or soy butter for a nut-free alternative.
  4. To add a little more, look for jellies lower in added sugar and no high fructose corn syrup to add on top of each slice.
  5. Sprinkle in chia seeds or sunflower seeds on the peanut butter before placing the banana for some crunch!
