Fresh Recipe: Guacamole Deviled Eggs

Loaded with protein and fiber but light in carbs, this is the perfect snack or breakfast!

GuacamoleDeviledEggs

Guacamole Deviled Eggs (Serving Size 2 halves)

Ingredients:

  • 18 eggs, hard boiled, cooled and peeled
  • 3 medium avocados
  • 6-7 tsp lime juice
  • 3 tsp red onion, minced
  • 3 tbsp jalapeño, minced
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp tomato, diced
  • Kosher salt and fresh ground pepper, to taste
  • Chile powder for garnish

Directions:

  1. Cut the eggs in half horizontally, set the yolks aside.
  2. Mash the avocado and two egg yolks.
  3. Mix in the lime juice, onion, jalapeño, cilantro, salt and pepper. Adjust to taste.
  4. Fold in tomatoes.
  5. Scoop some of the guacamole into the egg halves.
  6. Sprinkle the top with some Chile powder.
  7. Enjoy!
