Colorful Tahini Coleslaw Salad Recipe

Ditto for this grown-up version of coleslaw that uses a surprise nutritional star, tahini!

Tahini is a flavorful and healthy swap for mayonnaise in creamy recipes. Coleslaw is an easy summer staple to make for any occasion. You can choose to use prepackaged coleslaw mix, or cut up a head of green and purple cabbage yourself, and add your own shredded carrots and red onions if you prefer. 

Lori Bumbaco, Oncology Dietitian at NorthShore’s Kellogg Cancer Center shares this tasty recipe: 

Colorful Coleslaw

Ingredients:

  • 14-ounce coleslaw mix
  • 1/4 red onion (optional) 
  • 1/2 cup tahini
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon brown mustard
  • 1-2 teaspoons hot sauce
  • 2 teaspoons white sugar choose vegan sugar as needed
  • 1/8 teaspoon salt
  • 1/3 cup pumpkin seeds (optional) 

Directions:

  1. In a large mixing bowl, combine the dressing ingredients: tahini, apple cider vinegar, water, brown mustard, hot sauce, sugar, salt. Stir until creamy - it will be similar to the consistency of ranch dressing. 
  2. Add coleslaw mix and red onion to the tahini dressing. Stir with a wooden spoon until the cabbage is evenly coated in dressing. Toss with pumpkin seeds (optional).
  3. Enjoy chilled.
