Roasted Asparagus Side Dish for a Spring Occasion

Asparagus is a nutritious and tasty addition to any meal. It's low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K.

Emmaline Rasmussen, Registered Dietitian and Nutrition Professional Specialist, offers the ingredients and the steps to nail this recipe. 

Roasted Asparagus

Ingredients:

Roasted Asparagus (vegan) – serves 4

  • 1 lb asparagus, ends trimmed
  • 2 tbsp extra virgin olive oil
  • Zest of ½ lemon
  • 2 minced garlic cloves
  • Salt and ground black pepper to taste
  • ½ lemon cut into wedges, optional for serving

Directions: 

  1. Preheat oven to 400 F.
  2. Place trimmed asparagus on a cookie sheet and spread out evenly.
  3. Whisk all remaining ingredients (except lemon wedges) in a bowl and then coat the asparagus in the mixture.
  4. Bake in oven until tender, about 10-15 minutes, turning every few minutes.
  5. Serve asparagus with a lemon wedge for garnish.
