Fresh Recipe: Pumpkin Spice Chia Pudding

While it is very sad to see summer go, there is no denying that we secretly enjoy the chill in the air, the warm colors arriving and pumpkin everything.

To help us indulge in our pumpkin treats, Sharmila Chatterjee, MSc, MS, RD, LDN, CDE, Dietitian and Diabetes Educator at NorthShore, shares a healthy chia pudding recipe. This pumpkin spice treat is so good, you could eat this for breakfast or dessert!

Pumpkin Spice Chia Pudding (makes 1 serving)

Ingredients:

  • ¼ cup chia seeds
  • 1 cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • 15 drops stevia 
  • ¼ cup pumpkin puree
  • ½ tsp pumpkin spice
  • pinch of salt
  • chopped pecans

Directions:

  1. Mix together the chia seeds and almond milk. Let this mixture sit in the fridge for an hour.
  2. Add in the vanilla extract, stevia, pumpkin puree, pumpkin spice and salt to the chia seed mixture.
  3. Blend in a high-speed blender until creamy and smooth.
  4. Pour into glass of your choice and top with the pecans.
