Fresh Recipe: Skinny Elvis Ice Cream Sandwiches

A healthy take on ice cream sandwiches worthy of the king himself! The kids will love this sweet treat that is secretly good for them.

Emmaline Rasmussen, Registered Dietitian and Diabetic Education Manager, shares a favorite recipe for a sweet tooth that is naturally sweet. Emmaline’s sandwiches can be stored in the freezer in a sealed container for a sweet treat all week!

Ingredients:

  • 4 medium ripe bananas
  • ¼ cup nonfat vanilla or plain Greek yogurt (plain has less sugar but will make the recipe taste a little more tart)
  • 2 tbsp + 1 tsp unsweetened peanut butter

Directions:

  1. Mix the peanut butter and Greek yogurt together in a small bowl.
  2. Slice the bananas into slices about ½ an inch thick each.
  3. Arrange half of the slices on a cookie sheet covered in parchment paper.
  4. Spread the yogurt/peanut butter mixture on the banana slices arranged on the cookie sheet and top with the remaining banana slices, creating mini banana sandwiches.
  5. Place in the freezer for 2 hours or more. Enjoy!*

*If your teeth are sensitive to cold foods, you may choose to allow the frozen treats to thaw for a minute or two before eating
